One of our favorite things about the summer is gathering plump and juicy berries to turn into yummy baked goods, or just for snacking on throughout the day. Having a no-fail and simple muffin recipe in your back pocket to turn those harvested gems into a breakfast staple makes the berry season even better.
This is a no-fail, standard muffin recipe adapted from The Baker’s Café in Katonah, New York. Simple recipes for kids like this one, gives you and your little bakers a blank canvas for creating a wide variety of baked treats, which is really the best thing to have. Certain muffin combinations will appeal to certain kids and certain times of the berry season. As the summer turns to fall, you can add apples and pears from the orchard visits. However you want to slice it, enjoy these simple recipes for kids and the bounty of the season!

Makes 12 muffins.
Ingredients:
- ½ cup melted butter
- 2 eggs
- 1 cup milk
- 2 cups flour
- ½ cup sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
Directions:
Preheat your oven to 400 degrees. Line a muffin tray with paper baking cups and then coat with a vegetable oil spray. Set aside.
In a small saucepan, melt the butter and allow it to cool. When it has cooled, whisk together the butter, eggs, and milk in a medium mixing bowl.
In a separate medium to large bowl, mix together the dry ingredients. Combine the wet and dry ingredients and mix gently, but be careful not to over mix. The batter should be smooth.
Spoon the batter into muffin cups and fill right to the top. You can use an ice cream scoop to ensure the muffins are the same size.
Bake at 400 degrees for 25 to 30 minutes or until the tops are lightly brown.
Muffin Combinations:
Add one or more the following to the batter:
- Blueberries: 1 cup fresh or frozen blueberries
- Bananas: Slice 2 bananas or mash up enough to make about 2 cups
- Apples: Peel and grate 2 apples and add 1 tablespoon of cinnamon (optional: add ½ cup of raisins if you like them).
- Chocolate: 1 cup chocolate chips
- Or make up your own delicious muffin filling based on whatever fruit you have on hand!
